1 Good handful or more Moringa leaves (stems removed)
2 Cloves garlic crushed and chopped
1 bunch Spinach (Swiss Chard or other) finely chopped
1 small Chilli (optional) finely chopped
1 Onion finely chopped
¼ tsp Mustard seeds (optional)
A little oil for frying
Stir fry onion, garlic, mustard seeds and chillies until nicely browned add Swiss Chard continue to stir fry for a further 5 minutes add Moringa leaves stir fry for 2 minutes salt and pepper to taste. Serve with rice or as side dish to any meat dish.
